Ever wondered why early European polar expeditions were wiped out by scurvy — while the Khanty and Nenets, native peoples of the same frozen latitudes, stayed healthy for thousands of years?

The answer lies in something Russian chroniclers once dismissed with a sneer: "fish-eaters." Fish prepared the Khanty way — a city dweller would take one sniff and toss it out. It's sharp-smelling, the meat dark and soft, the odor thick, almost like pine needles on a hot afternoon, only sharper and heavier. But it's exactly in that state — under controlled breakdown of protein and fat — that B vitamins bloom, the very ones that simply boil away in cooking. No greens, no fruit, not a single sunlit day all winter — and yet, no scurvy.

There's a dark side to this cuisine too. Fermentation builds up compounds in the meat that are, quite literally, corpse poisons — cadaverine, putrescine. Kopalkhen, a similar dish among the Chukchi and Nganasan peoples of Russia's far north, is officially considered lethal to outsiders. A small bite can put a grown adult out of commission for a week. The northerners themselves take in these compounds from their earliest months of life — quite literally, a scrap of fish standing in for a pacifier. Their gut microbiome is tuned over generations. Anthropologists call it scavenger's immunity — and they mean it literally, not as a figure of speech.

Today biochemists study these northern recipes with the same care given to fine aged cheese. The principle is one and the same: maximum nourishment from minimal resources. The open question is whether this knowledge survives the century — the young head off to the supermarket, and with them goes a biochemical shield a thousand years in the making.

The tundra was a laboratory. It just never wore a lab coat.
